Elaboration:
Manual harvest in boxes of 18 kg.
The harvest is destemmed, squeezed and kept for 5 days with the skins. Then it is pressed and the alcoholic fermentation in a stainless steel tank ends.
Then it rests and ages for 5 months in 225-litre French oak barrels.
Prior to bottling, the barrels are assembled.
Unclarified, unfiltered, no added sulfites.
Tasting note:
VIEW: bright ruby red.
SMELL: red fruit like strawberries and cherries, purple fruit like blackberries and blueberries, balsamic like the scrub plants that surround the plot, spices like bay leaves, red or black pepper.
TASTE: entry of red and purple fruit, pleasant mid palate with good acidity and fruity, medium-long aftertaste with sweet and round tannins.
